Today for lunch I went to La Tua Piadina, a piadineria near to where I live that I'd been meaning to try all semester. Piadinas, a regional dish which is more or less an Italian burrito. But these are simply delicious. The dough is made with lard (yes!), rolled right there, and place on a hot griddle. They are then stuffed with just about whatever you want. I had one with mozzarella, speck (smoked prosciutto basically) and mushrooms. The dough crispy and chewy at the same time, salty and a little sweet. So good! I'm definitely going to be returning.
