Day 81

Tonight was another cooking class and dinner with Rita. We made a lot of food. We started with a spinach and pancetta tart that was absolutely delicious, the dough buttery and the filling, well, very filling.


For our primi, we made Bolognese lasagna. This isn't really how we think of lasagna. Instead, its a vegetable ragu (tomato, zucchini and bell pepper) with taleggio cheese sandwiched between two sheets of cooked spinach pasta (which we made by hand) and baked with parmigiano on top. This was good, but could have used a little more substance.


For the secondi, we had bread that we had freshly baked and a salad of greens, pecorino cheese, blood orange and a yogurt dressing.


For dessert, there was a delicious strawberry "bavarese," basically a light strawberry custard. Really refreshing with really strong berry taste.
